Thinly chop the fresh herbs. Put the butter, mustard, garlic, herbs and pepper in a bowl. Mix well. Place butter on plastic film and make a roll and refrigerate until it solidifies.
Dry the pork chops well with paper towels. Place them on a plate and give them salt and pepper.
Seal the pork chops in a hot pan with a little olive oil for 5 minutes each side until they are golden. Once ready add vinegar, water and pieces of flavored butter. Turn off the heat and let the butter melt. Mix everything to form a sauce and serve hot.
